Perfecting Skills Program for Fromageries Bel
This April, Le Cordon Bleu Paris had the honor of welcoming the three winners of the first ever pastry competition organized by Bel Group* in Korea.
The competition, sponsored by the Kiri brand, took place last November, with more than 90 professionals applying to take part.
The aim of this competition was to promote the superior quality of Kiri cream cheese, and to allow Korean chefs to show the different uses they can make of this ingredient (cream cheese) in pastry.
The winners in the three competition categories; Jae-Hyong HAN (Pie Category), Young-Deok KIM (Bread Category), Tae-Kyong LEE (Cake category), were awarded a two day Perfecting Skills course at Le Cordon Bleu Paris. This exclusive program was masterminded by Pastry Chef and Instructor Jean-François Deguignet. The different entremets prepared included a delicious cheesecake recipe made with Kiri.
On top of learning advanced pastry techniques, the winners also had the chance to visit the Kiri production site in Sablé-sur-Sarthe as well as discovering Paris and its culinary treasures.
